Preparation
- Preheat the oven to 375°F (190°C).
- In a pan, sauté minced garlic and chopped onion in olive oil until translucent.
- Add the spinach and cook until wilted.
- Stir in crumbled feta cheese, salt, pepper, and your choice of Mediterranean herbs.
Assembly and Baking
- Layer several sheets of phyllo dough on a baking sheet, brushing each layer with olive oil.
- Place a spoonful of the spinach and feta mixture on one edge of the phyllo and roll it up into a crisp.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Serve warm as a snack or appetizer.
Notes
These crisps can be assembled ahead of time and refrigerated for a few hours. If frozen, bake from frozen and add a few extra minutes. For a gluten-free option, use gluten-free phyllo or small wonton wrappers.
