Main Ingredients
  • 1 cup lentils
  • 2 cups vegetable broth
  • 1 tablespoon olive oil Use premium extra virgin for best flavor.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 carrot, diced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Rinse lentils under cold water and set aside.
  2. Heat olive oil in a large pot over medium heat until shimmering.
  3. Add chopped onion and garlic, sauté until the onion is translucent.
  4. Add bell pepper and carrot, cooking for another 5 minutes.
Cooking
  1. Add lentils, vegetable broth, cumin, smoked paprika, salt, and pepper to the pot.
  2. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
  3. Garnish with fresh cilantro before serving.

Notes

Don't skimp on the olive oil for better flavor. Rinsing lentils is essential to avoid unwanted crunch.
