Ingredients
  

Main Ingredients
  • 4 pieces mini pizza crusts or naan rounds Trader Joe's naan rounds work great.
  • 8 oz brie cheese, sliced Rind on is fine.
  • 1/2 cup dried cranberries Store-brand is acceptable.
  • 1/2 cup walnuts, toasted and chopped Toast walnuts carefully to avoid burning.
  • 1/4 cup honey For the hot honey drizzle.
  • 1 tsp red pepper flakes Adjust to taste.
  • 2 tbsp olive oil For brushing on the crusts.
  • 1 tsp fresh thyme leaves For garnish.
  • Salt and black pepper to taste

Method
 

Preparation
  1. Brush both sides of the mini pizza crusts or naan rounds with olive oil and sprinkle lightly with salt and black pepper.
  2. Toast walnuts in a dry skillet over medium heat for 4–6 minutes, stirring frequently until fragrant and golden. Remove from heat, let cool, and chop.
  3. In a small bowl, combine honey and red pepper flakes. Stir and let sit to infuse.
  4. Slice the brie into thin pieces and lay them evenly over each crust.
  5. Sprinkle dried cranberries over the brie, then scatter the chopped walnuts over the top.
Baking
  1. Preheat oven to 400°F (200°C). Place pizzas on a parchment-lined baking sheet and bake for 8–12 minutes until brie is melted and bubbling.
  2. Sprinkle with fresh thyme leaves and drizzle with hot honey immediately after removing from oven.
  3. Cut each mini pizza into 4 wedges and serve warm.

Notes

These mini pizzas can be prepared a few hours ahead without baking. Assemble the crusts with brie, cranberries, and walnuts, then bake and drizzle with hot honey just before serving.
