Ingredients
  

For the roasted cauliflower
  • 1 head head of cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • to taste Salt and pepper
For the tahini-honey sauce
  • 1/4 cup tahini Avoid fancy tahini.
  • 2 tablespoons honey You can substitute with maple syrup.
  • 1 tablespoon juice of 1 lemon Fresh lemon juice enhances flavor.
For garnish
  • to taste Fresh parsley, chopped For garnish on top before serving.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, cumin, paprika, turmeric, salt, and pepper until well coated.
Roasting
  1. Spread the cauliflower on a baking sheet in a single layer and roast for 25-30 minutes or until golden and tender.
Sauce Preparation
  1. In a separate bowl, whisk together tahini, honey, and lemon juice until smooth.
  2. Drizzle the tahini-honey sauce over the roasted cauliflower and toss to combine.
Serving
  1. Garnish with chopped parsley before serving.

Notes

For best results, roast the cauliflower in a single layer and avoid overcrowding. This dish can be made ahead of time, roasting the cauliflower only until nearly done and finishing under the broiler before serving.
