Ingredients
  

Dry Ingredients
  • 1 cup rolled oats Don't use instant oats.
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Butter should be softened but not melted.
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup raisins Plump them in warm water if shriveled.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the rolled oats, flour, cinnamon, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Fold in the raisins.
Baking
  1. Spread the mixture evenly into the prepared baking pan.
  2. Bake for 25-30 minutes or until golden brown.
  3. Allow to cool before cutting into bars.

Notes

For an indulgent twist, swirl in chopped pecans or drizzle with browned butter for extra flavor.
