Cooking the Rice
- Cook the rice according to package instructions.
Making the Pudding
- In a large pot, combine the cooked rice, milk, sugar, vanilla extract, cinnamon, and salt.
- Cook over medium heat, stirring often, until the mixture thickens.
- In a separate bowl, beat the eggs and gradually stir in a bit of the hot rice mixture to temper the eggs.
- Slowly add the egg mixture back into the pot, stirring constantly.
- If using, fold in the raisins.
- Cook for a few more minutes until thickened to your liking.
- Serve warm or chilled.
