Ingredients
  

Main Ingredients
  • 2 pounds potatoes Yukon Gold or red potatoes work well.
  • 1 cup green olives
  • 1 cup Kalamata olives
  • 1 cup feta cheese Crumbled.
  • 1 medium red onion Diced.
  • 1 cup cherry tomatoes Halved.
  • 1 medium cucumber Diced.
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/4 cup fresh parsley Chopped.
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Boil the potatoes in salted water until fork-tender.
  2. Drain and let cool slightly, then cut into cubes.
Mixing
  1. In a large bowl, combine the potatoes with chopped olives, feta cheese, diced red onion, halved cherry tomatoes, and diced cucumber.
  2. In a small bowl, whisk together olive oil, lemon juice, chopped parsley, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
Serving
  1. Serve chilled or at room temperature.

Notes

Add the dressing while the potatoes are still a touch warm to soak up flavor. Taste as you go and adjust seasoning as needed.
