One Pot Chicken Shawarma Rice

Ingredients
  

For the Chicken Marinade
  • 1 lb chicken breast, sliced Thighs can also be used for a juicier result.
  • 1 tbsp ground cumin Single-origin cumin is recommended for best flavor.
  • 1 tbsp ground coriander
  • 1 tsp paprika
  • 1 tsp turmeric
  • Salt and pepper to taste
For the Rice
  • 2 cups rice Long-grain white rice is preferred, but basmati can be used.
  • 2 cups chicken broth Aldi’s broth is a budget-friendly option.
  • 1 onion chopped Sauté until translucent.
  • 3 cloves garlic, minced Add after browning the chicken.
For Serving
  • 1 cup plain yogurt Greek yogurt for creaminess is ideal.
  • Chopped parsley For garnish.

Method
 

Preparation
  1. In a bowl, combine sliced chicken with cumin, coriander, paprika, turmeric, salt, and pepper. Marinate for at least 30 minutes.
Cooking
  1. In a large pot or skillet, heat some oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the marinated chicken and cook until browned.
  3. Stir in the garlic and cook for another minute.
  4. Add rice to the pot and stir to coat with the spices.
  5. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 18-20 minutes or until rice is cooked and liquid is absorbed.
  6. Fluff the rice with a fork and serve topped with yogurt sauce and garnish with parsley.

Notes

Don't skimp on toasting spices for enhanced flavor. You can prep ahead by marinating chicken and chopping ingredients earlier in the day.
