Main ingredients
  • 1 cup rice Use your choice of rice, white or brown.
  • 2 cups vegetable broth This will add flavor to the rice.
  • 1 cup mushrooms, sliced Any type of mushrooms, fresh or dried.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika Optional, can be substituted or omitted.
  • to taste Salt and pepper
  • 2 tablespoons olive oil For sautéing.
  • to taste Fresh parsley, for garnish

Method
 

Preparation
  1. In a pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until soft.
  2. Add sliced mushrooms and cook until they release moisture.
  3. Stir in rice, paprika, salt, and pepper.
  4. Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
  5. Fluff with a fork and garnish with fresh parsley before serving.

Notes

You can add proteins like beans or chicken for a heartier meal. This dish can be made ahead for potlucks and reheated with a splash of broth.
