Main Ingredients
  • 8 oz chow mein noodles
  • 2 tablespoons vegetable oil For frying
  • 2 cups mixed vegetables (bell peppers, carrots, cabbage, onions) Frozen mixed vegetables work well
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce Can be omitted for a vegan version
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Green onions for garnish Chopped

Method
 

Preparation
  1. Cook the chow mein noodles according to package instructions. Drain and cover with a kitchen towel.
Cooking
  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add mixed vegetables and stir-fry for about 3-4 minutes until tender-crisp.
  3. Add the cooked chow mein noodles to the pan.
  4. Pour the soy sauce and oyster sauce over the noodles. Sprinkle with garlic powder, salt, and pepper.
  5. Toss everything together and cook for an additional 2-3 minutes until heated through.
  6. Serve hot, garnished with chopped green onions.

Notes

Best served fresh. Can add chicken or shrimp for a protein boost.
