Preparation
  1. In a mixing bowl, combine the Greek yogurt, peanut butter, and vanilla extract. Mix well until combined.
  2. If desired, add honey or maple syrup to taste and blend until smooth and creamy.
  3. Transfer the mixture into a loaf pan and spread evenly with a spatula.
  4. Cover with foil or a lid and freeze for at least four hours, preferably overnight.
  5. Before serving, let it sit at room temperature for a few minutes to soften slightly.

Notes

For a variation, feel free to mix in chocolate chips or swap Greek yogurt for coconut yogurt for a vegan option. Will last in the freezer for up to a month if stored properly.
