- In a mixing bowl, combine the Greek yogurt, peanut butter, and vanilla extract. Mix well until combined.
- If desired, add honey or maple syrup to taste and blend until smooth and creamy.
- Transfer the mixture into a loaf pan and spread evenly with a spatula.
- Cover with foil or a lid and freeze for at least four hours, preferably overnight.
- Before serving, let it sit at room temperature for a few minutes to soften slightly.
Notes
For a variation, feel free to mix in chocolate chips or swap Greek yogurt for coconut yogurt for a vegan option. Will last in the freezer for up to a month if stored properly.
