Ingredients
  

For the crust
  • 1/2 cup unsalted butter, softened Use real unsalted butter for best flavor.
  • 3 oz cream cheese, softened Generic works fine here.
  • 1 cup all-purpose flour
  • 1 pinch salt
For the filling
  • 2 tablespoons melted butter
  • 3/4 cup brown sugar
  • 1 tablespoon light corn syrup or maple syrup Real maple syrup for a richer flavor.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 3/4 cup chopped toasted pecans Toast them in a dry skillet for extra flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. In a medium bowl, beat softened butter and cream cheese until smooth. Add flour and salt until a soft dough forms.
  3. Shape the dough into 1-inch balls and press each into a mini muffin cup to form shells.
  4. Chill the shells for 15 minutes before filling.
Filling & Baking
  1. In another bowl, whisk together melted butter, brown sugar, syrup, egg, vanilla, and salt until smooth.
  2. Fold in the pecans.
  3. Spoon about 1 teaspoon of filling into each shell.
  4. Bake for 18–20 minutes until the filling is set and the crust edges are golden brown.
  5. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Keep them in an airtight tin at room temperature for 3 days or refrigerate for a week. They also freeze well.
