Ingredients
  

Flatbread Ingredients
  • 2 pieces naan or flatbread rounds
  • ½ cup basil pesto Fresh or jarred is recommended
  • 1 cup cooked chicken breast, shredded or chopped Store-bought rotisserie chicken works well
  • 1 cup shredded mozzarella cheese
  • ¼ cup cherry tomatoes, halved
  • 2 tbsp red onion, thinly sliced
  • to taste olive oil For brushing
  • to taste salt & black pepper
  • to taste fresh basil leaves For garnish
  • optional red pepper flakes or balsamic glaze For extra flavor

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place naan or flatbreads on the sheet and brush lightly with olive oil.
  3. Spread pesto evenly over each naan, reaching the edges.
Assembly
  1. Layer with chicken, mozzarella, tomatoes, and red onion. Season with salt and pepper.
Cooking
  1. Bake for 10–12 minutes, or until cheese is melted and edges are golden.
  2. Remove from oven. Garnish with basil, red pepper flakes, or balsamic glaze if desired.
  3. Slice and serve warm.

Notes

Let the flatbread rest for 2 minutes before slicing, to avoid burns from molten cheese.
