Preparation
  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking pan with cooking spray or a thin layer of butter, making sure to grease the corners.
  2. Melt 0.5 cup unsalted butter in the microwave or on the stove and cool for a couple of minutes.
  3. In a big bowl, whisk the 2 eggs until blended and slightly frothy. Slowly stream in the melted butter while whisking until glossy and smooth.
  4. Sprinkle in the 3.4 oz pistachio instant pudding mix and stir until the mixture turns beautifully green and thickens.
  5. Add the entire package of sugar cookie mix and use a spatula or wooden spoon to stir until combined and no dry pockets remain.
  6. Transfer the dough into your greased pan and press it into an even layer.
  7. Bake for 20-25 minutes until lightly golden, with a soft center.
  8. Let the bars cool in the pan for 20-30 minutes before cutting into squares.

Notes

These bars are best slightly underbaked. Store in an airtight container at room temperature for 2-3 days or in the fridge for a denser texture.
