Ingredients
  

For the Bread
  • 1.5 cups All Purpose Flour
  • 2 large Eggs
  • 0.5 cup Unsalted Butter Best if at room temperature.
  • 0.25 tsp Salt
  • 1 tsp Baking Powder
  • 0.75 cup White Sugar
  • 0.67 cup 2% Milk Can substitute with plant milk.
  • 1 package Jell-O Pistachio Pudding Mix Instant mix preferred.
  • 0.25 cup Chopped Pistachios Adds texture.
For the Glaze
  • 1 cup Icing Sugar
  • 2 Tbsp 2% Milk Adjust for desired consistency.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a greased loaf pan.
  2. In a large mixing bowl, add your sugar, eggs, and butter. Mix well.
  3. Add the milk, pistachio pudding mix, baking powder, and salt. Mix until combined.
  4. Slowly add the flour and fold the batter until there are no clumps.
  5. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
Cooling and Glazing
  1. Let the bread cool before glazing.
  2. For the glaze, combine icing sugar and milk until smooth. Drizzle over the cooled loaf.

Notes

If the batter is too dense, add a splash more milk. If it's too runny, chill the pan for five minutes.
