Ingredients
  

For the Sandwich
  • 1/2 cup unsalted butter, very soft Best if butter is at room temperature
  • 1 tablespoon grated parmesan cheese
  • 4 slices bread Use good quality bread
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/4 cup pepperoni slices Optional, can skip for vegetarian version

Method
 

Preparation
  1. In a small bowl, mix the softened butter and grated parmesan cheese together. Spread the mixture on one side of each slice of bread.
Cooking
  1. Heat a skillet over medium heat.
  2. Place two slices of bread, buttered side down, in the skillet.
  3. On each slice, layer mozzarella cheese, pizza sauce, and pepperoni slices if desired.
  4. Top with the remaining two slices of bread, buttered side up.
  5. Cook until golden brown on one side, then carefully flip and cook the other side until the cheese is melted and bread is toasted.
  6. Serve warm and enjoy!

Notes

Butter the outside of the bread and let it sit for a minute before cooking for perfect browning. Press gently with a spatula while cooking to ensure even melting of cheese.
