  • 3-4 medium medium potatoes The good stuff, not the sad spuds.
  • 1/4 cup balsamic glaze The fancy stuff, not the no-name brand.
  • 2 tablespoons olive oil Extra virgin if you’re feeling spicy.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Freshly cracked is ideal.
  • to taste fresh thyme leaves For a delightful herbal aroma.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the potatoes as thinly as possible using a mandoline or sharp knife.
  3. In a bowl, mix the sliced potatoes, olive oil, balsamic glaze, salt, pepper, and thyme.
Cooking
  1. Layer the potato slices in a greased pie dish, overlapping them.
  2. Cover with aluminum foil and bake for 30 minutes.
  3. Remove the foil and bake for an additional 20-25 minutes until golden brown.
  4. Allow to cool for about 5 minutes before serving.

Notes

For extra flavor, consider adding cheese or experimenting with sweet potatoes instead.
