Ingredients
  

For the Cookies
  • 2 cups Rice Krispies Use fresh, crispy rice cereal.
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened Do not substitute margarine.
  • 1 cup brown sugar Tightly packed, dark brown is preferred.
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract Quality matters; use good vanilla if possible.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Semi-sweet preferred, optional to use chopped chocolate.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, beat together softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  4. Add the egg and vanilla extract, mixing until cohesive.
  5. In another bowl, whisk together flour, baking soda, and salt.
  6. Gradually add dry ingredients to the wet mixture, mixing just until combined.
  7. Gently fold in Rice Krispies and chocolate chips without breaking the cereal.
  8. Drop spoonfuls of dough onto the lined baking sheet, spaced apart.
Baking
  1. Bake for 10-12 minutes until edges are golden and centers look soft.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container. Add a slice of bread to keep them soft. You can freeze dough or baked cookies for later use.
