- In a large pot, sauté the chopped onion over medium heat until translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the crushed tomatoes, broth, and dried basil. Bring to a boil.
- Add the tortellini and cook according to package instructions, usually about 5-7 minutes.
- Stir in fresh spinach and cook until just wilted.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
Notes
For an extra-briny twist, add a spoonful of capers. For richer depth, stir a spoonful of tomato paste with onions before adding tomatoes.
