- Clean the mushrooms and cut large ones in half if needed.
- In a large bowl, toss the mushrooms with vegetable oil, balsamic vinegar, soy sauce, minced garlic, thyme, salt, and pepper until well coated.

- Spread the mushrooms in a single layer on a baking sheet.
- Roast in the preheated oven for about 25 minutes, stirring halfway through, until mushrooms are tender and caramelized.
