Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, combine breadcrumbs, herbs, onion, garlic, melted butter, salt, and pepper to make the stuffing.
- Stuff the Cornish hens with the mixture.
- Place the hens in a roasting pan and brush with butter.
Cooking
- Roast in the oven for about 1 hour or until the internal temperature reaches 165°F (74°C).
- Let rest before serving.
Notes
Leave space between the hens in the roasting pan for even cooking. Baste once or twice for extra flavor. If the tops brown too quickly, tent with foil.
