Preparation
- Preheat the oven to 400°F (200°C).
- Slice sweet potatoes into rounds, about 1/4 inch thick.
- In a large bowl, toss sweet potato rounds with olive oil, salt, and pepper until well coated.
- Arrange the sweet potato rounds on a baking sheet in a single layer.
Cooking
- Roast in the preheated oven for 20-25 minutes, flipping halfway through, until they are tender and caramelized.
- Remove from the oven and let cool slightly.
Serving
- Top each sweet potato round with crumbled feta cheese and drizzle with honey.
- Garnish with fresh herbs if desired and serve warm.
Notes
For best results, do not overcrowd the baking sheet to avoid steaming. Feel free to substitute goat cheese for a creamier texture. Can be made vegan by replacing feta with firm tofu and honey with maple syrup.
