  • 2 tablespoons olive oil For tossing sweet potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup feta cheese, crumbled Preferably from the deli counter
  • 2 tablespoons honey Use good quality honey

  • to taste Fresh herbs (mint or thyme) For garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice sweet potatoes into rounds, about 1/4 inch thick.
  3. In a large bowl, toss sweet potato rounds with olive oil, salt, and pepper until well coated.
  4. Arrange the sweet potato rounds on a baking sheet in a single layer.
Cooking
  1. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until they are tender and caramelized.
  2. Remove from the oven and let cool slightly.
Serving
  1. Top each sweet potato round with crumbled feta cheese and drizzle with honey.
  2. Garnish with fresh herbs if desired and serve warm.

Notes

For best results, do not overcrowd the baking sheet to avoid steaming. Feel free to substitute goat cheese for a creamier texture. Can be made vegan by replacing feta with firm tofu and honey with maple syrup.
