Ingredients
  

Pasta and Protein
  • 12 oz rotini pasta
  • 1 lb ground beef Can substitute with ground turkey.
Sauce and Flavorings
  • 1 can Rotel tomatoes with green chilies
  • 1 can cream of mushroom soup Gives nostalgic texture, can substitute with béchamel.
  • 1 cup shredded cheddar cheese Use decent quality cheddar.
  • 1 cup sour cream Mix in off heat to prevent curdling.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Method
 

Cooking Pasta
  1. Cook the rotini pasta according to package instructions. Drain and set aside.
Preparing the Sauce
  1. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the Rotel tomatoes, cream of mushroom soup, garlic powder, onion powder, salt, and pepper to the skillet. Stir until combined and heated through.
Combining Ingredients
  1. Mix in the cooked pasta and stir until well combined.
  2. Remove from heat and fold in the sour cream and half of the shredded cheddar cheese until creamy.
Baking
  1. Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
  2. Bake at 350°F (175°C) for 20-25 minutes until bubbly and cheese is golden.
Serving
  1. Serve hot and enjoy!

Notes

This dish is forgiving; you can adjust the ingredients as needed and it will still taste great. Perfect for potlucks and quick weeknight dinners.
