  • 2 cups cooked jasmine or basmati rice Preferably cold or day-old for best texture.
  • 0.5 lb shrimp, peeled and deveined
  • 0.5 lb steak (such as sirloin or flank), thinly sliced
  • 2 tablespoons vegetable oil For frying.
  • 1 cup frozen peas and carrots, thawed Store-bought or homemade.
  • 0.5 cup diced onion
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional) Adds umami depth.
  • 1 teaspoon sesame oil For flavor.
  • 3 tablespoons green onions, sliced For garnish.

Method
 

Preparation
  1. Heat the vegetable oil in a hot wok or heavy skillet until it ripples.
  2. Sear the steak briefly; remove and set aside.
  3. In the same pan, add shrimp and cook until pink and slightly charred.
  4. Push shrimp to the side and add the beaten eggs, scrambling them until they just set.
  5. Add the cooked rice and stir to combine, allowing the edges to crisp.
  6. Mix in the onions, garlic, peas, and carrots, stirring uniformly.
  7. Finish with soy sauce, oyster sauce (if using), sesame oil, and green onions, mixing gently.

Notes

Use day-old rice for the best texture. Do not overcrowd the pan for a good sear.
