  • 4 medium potatoes, diced Do not buy pre-diced potatoes.
  • 1 cup shredded cheddar cheese Use good quality cheddar.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth Good quality broth enhances flavor.
  • to taste Salt and pepper
  • 1 tablespoon olive oil For browning the steak.

Preparation
  1. Heat the olive oil in a skillet over medium heat until shimmering.
  2. Add the steak cubes and brown on all sides.
  3. In the slow cooker, layer the diced potatoes, browned steak, chopped onions, and minced garlic.
  4. Pour the beef broth over the mixture and season with salt and pepper.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  2. About 30 minutes before serving, sprinkle the cheddar cheese on top, cover, and let it melt.

Notes

This dish is perfect for potlucks. If you use chicken instead of beef, consider adapting flavors from a chicken and gravy recipe. Potatoes should be kept in a single layer for best results.
