Ingredients
  

For the Smashed Beef
  • 1.5 lbs ground beef (80/20) For juiciness
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp chili powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
For the Cowboy Butter
  • 6 tbsp melted butter
  • 3 cloves garlic, grated
  • 1 tbsp chopped parsley
  • 1 tsp Dijon mustard
  • 0.5 tsp smoked paprika
  • 0.25 tsp cayenne
  • 0.5 tsp dried oregano
  • 0.5 tsp flaky salt
For the Spicy Dipping Sauce
  • 0.5 cup mayo
  • 2 tbsp ketchup
  • 1 tbsp hot sauce
  • 1 tbsp pickle juice
  • 0.5 tsp smoked paprika
  • 0.25 tsp garlic powder
  • pinch cayenne to taste
For Assembly
  • 10-12 small flour tortillas
  • 2 cups shredded cheddar or American cheese
  • Butter or oil for skillet

Method
 

Preparation
  1. Season the ground beef with smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper.
  2. Roll seasoned beef into small meatballs.
Cooking
  1. Heat a skillet over medium-high heat with butter or oil.
  2. Place a tortilla in the skillet, set a meatball in the center, smash it, and cook until browned and crispy.
  3. Flip, top with cheese, and brush with cowboy butter.
Making the Sauces
  1. In a bowl, whisk together melted butter with garlic, parsley, Dijon, smoked paprika, cayenne, oregano, and flaky salt to make the cowboy butter.
  2. In another bowl, whisk together mayo, ketchup, hot sauce, pickle juice, smoked paprika, garlic powder, and cayenne until smooth to create the spicy dipping sauce.
Serving
  1. Serve the smashed skillet wraps with the spicy dipping sauce on the side.
  2. If you have leftovers, reheat them in a skillet for a crispy finish.

Notes

Don’t skip brushing the butter on the tortilla edges for a delicious crisp texture. Excellent for big brunch spreads! Customize with extras as desired.
