Ingredients
  

For the graham cracker crust
  • 1.5 cups 1 1/2 cups graham cracker crumbs About 150g
  • 6 tablespoons 6 tablespoons unsalted butter, melted About 85g
  • 2 tablespoons 2 tablespoons granulated sugar About 25g
  • 1 pinch Pinch of salt
For the cookie dough filling
  • 1.25 cups 1 1/4 cups all-purpose flour About 160g
  • 0.5 cups 1/2 cup unsalted butter, softened About 115g
  • 0.5 cups 1/2 cup brown sugar, packed About 100g
  • 0.25 cups 1/4 cup granulated sugar About 50g
  • 1 large 1 large egg
  • 2 teaspoons 2 teaspoons pure vanilla extract About 10ml
  • 0.5 teaspoons 1/2 teaspoon baking soda About 3g
  • 0.25 teaspoons 1/4 teaspoon salt About 1g
  • 0.75 cups 3/4 cup chocolate chips About 130g, semi-sweet and/or milk chocolate
  • 0.5 cups 1/2 cup chocolate chunks About 85g
For the s’mores topping
  • 20-25 large 20–25 large marshmallows, cut in half About 180g
  • 1 cup 1 cup mini marshmallows About 50g
  • to taste optional Extra chocolate chips or shavings For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or line it with parchment.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, granulated sugar, and salt.
  3. Press the mixture into the bottom and sides of the pie dish. Bake for 7–8 minutes until lightly golden.
  4. Let the crust cool while you prepare the filling.
Making the Filling
  1. In a large bowl, beat together softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add the egg and vanilla, beating until smooth.
  3. In a separate bowl, whisk together flour, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  5. Fold in the chocolate chips and chunks.
Baking the Pie
  1. Spread the cookie dough filling evenly over the cooled graham crust.
  2. Bake for 22–25 minutes until the edges are golden and the center is just set.
  3. Allow it to cool for about 10 minutes.
Topping and Finishing
  1. Arrange the marshmallows on top, cut side down.
  2. Broil for 1–2 minutes, watching closely to prevent burning.
  3. Let the pie cool for at least 20 minutes before slicing.

Notes

This pie is best served warm. If making ahead, bake the crust and filling, cool, then add and broil the marshmallows before serving.
