  • 1 lb ground chicken
  • 2 cups fresh spinach, chopped Fresh spinach is recommended over packaged.
  • 3 cloves garlic, minced Adjust to taste; garlic is essential for flavor.
  • 1 cup mozzarella cheese, cubed Ensure the cubes are tucked inside the meatballs.
  • 1/2 cup breadcrumbs Use fresh breadcrumbs for better texture.
  • 1/4 cup grated Parmesan cheese Quality matters; splurge a little.
  • 1 egg Acts as a binder for the meatballs.
  • Salt and pepper to taste
  • Olive oil for cooking Ensure the oil is hot enough to sizzle.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix until well combined.
  3. Take a small amount of the mixture and flatten it in your hand, place a cube of mozzarella in the center, and wrap the meat around it, forming a ball.
  4. Repeat with the remaining mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat, and sear the meatballs until browned on all sides.
  2. Transfer the meatballs to a baking dish and bake in the preheated oven for 15-20 minutes, or until cooked through.
Serving
  1. Serve warm, and enjoy your cheesy meatballs!

Notes

These meatballs can be made ahead of time and frozen before baking. Bake straight from frozen, adding a few extra minutes to the cooking time.
