Preparation
- Clean the mushrooms by wiping them with a damp cloth and trim off any dry parts of the stems.
Cooking the Mushrooms
- Heat a medium skillet over medium heat. Add the olive oil and 1 tablespoon of butter.
- Once the butter melts, add the mushrooms to the skillet and sprinkle them with kosher salt. Let them cook undisturbed for about 3 minutes to get a good sear.
Adding Spices and Garlic
- Combine the paprika, onion powder, dried oregano, dried tarragon, black pepper, and chili powder in a small bowl.
- Add the minced garlic and the prepared spice mix to the mushrooms. Stir well and cook for an additional 1 to 2 minutes until the garlic is fragrant.
Optional Browning Sauce
- If using browning sauce, stir it into the skillet now and cook for another 1 to 2 minutes.
Finishing with Sauces
- Pour in the Worcestershire sauce and soy sauce. Stir everything together and allow to cook for another 2 to 3 minutes.
- Finish the dish by stirring in the remaining tablespoon of butter until melted and mixed through.
Garnish and Serve
- Sprinkle chopped chives over the mushrooms before serving.
Notes
For a more dramatic flavor, try using shiitake mushrooms. If you have leftovers, consider stuffing chicken with them.
