  • 1 cup whipped topping (like Cool Whip)
  • 1 cup fresh strawberries, diced
Topping
  • 1/2 cup strawberry crunch topping (store-bought or homemade)

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of an 8-inch square baking dish.
  3. Bake for 10 minutes and let cool.
Filling
  1. In a large mixing bowl, beat softened cream cheese until smooth.
  2. Gradually add powdered sugar and vanilla extract, mixing until combined.
  3. Fold in whipped topping and diced strawberries.
Assembly
  1. Spread the cheesecake mixture evenly over the cooled crust.
  2. Sprinkle strawberry crunch topping over the cheesecake layer.
  3. Cover with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.
  4. Lift the cheesecake out of the dish using parchment paper overhang. Cut into squares and serve chilled.

Notes

For Instagram-perfect clean lines, pop the chilled tray in the freezer for 10 minutes before cutting. Can be made gluten-free by swapping graham crumbs for a gluten-free option.
