  • 1 each avocado, diced
  • 1 each lime, juiced
  • 1 tsp chili powder

  1. In a large bowl, combine the shredded chicken, corn, rice or quinoa, cherry tomatoes, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, chili powder, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss to coat.
