Chicken and filling
  • 4 pieces chicken breasts Use skinless, boneless chicken breasts
  • 1 cup ricotta cheese Opt for fresh ricotta for best results
  • 0.5 cup spinach, chopped Use fresh spinach for a vibrant flavor
  • 0.5 cup mozzarella cheese, shredded Use shredded mozzarella for easy melting
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh herbs (such as basil, parsley, or thyme), chopped Fresh herbs enhance the flavor
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Salad for serving

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the ricotta cheese, spinach, mozzarella, Parmesan, and fresh herbs. Season with salt and pepper.
  3. Lay each chicken breast flat and place a portion of the ricotta mixture in the center.
  4. Roll the chicken up tightly and secure with toothpicks if needed.
  5. Place the rolls in a baking dish and drizzle with olive oil.
  6. Bake for 25-30 minutes until the chicken is cooked through.
  7. Serve with a side salad.

Notes

For extra juiciness, tent the dish with foil during the first 15 minutes of baking. These rolls can be prepared the night before and refrigerated; just bake directly from the fridge, adding a few extra minutes.
