Main Ingredients
  • 8 oz button mushrooms, chopped White button mushrooms are fine; cremini can be used for deeper flavor.
  • 2 cloves garlic, minced
  • 1/2 cup cream cheese, softened Use full-fat for best results.
  • 1/2 cup sour cream Greek yogurt can be substituted.
  • 1 cup shredded mozzarella cheese Bagged shredded is acceptable.
  • 1/2 cup grated parmesan cheese Pre-grated can be used.
  • 2 tbsp fresh parsley, chopped Fresh is preferable, but dried can be used.
  • 1 tbsp olive oil
  • Salt and pepper to taste Salt should be added at both the beginning and end.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add chopped mushrooms and minced garlic. Cook until mushrooms release moisture and turn golden (about 7-10 minutes).
  4. In a bowl, mix cream cheese, sour cream, mozzarella, and parmesan until smooth.
  5. Fold in sautéed mushrooms, garlic, parsley, and season with salt and pepper.
  6. Transfer the mixture to a baking dish and spread evenly.
  7. Bake for 20-25 minutes until bubbly and golden. Optionally broil for 1-2 minutes for extra browning.
  8. Let sit for 5 minutes before serving with chips, baguette, or veggie sticks.

Notes

This dip can be made ahead of time and baked when ready. Store in the refrigerator for up to 24 hours before baking.
