  • 1 lb chicken breast, diced
  • 1/2 cup sweet chili sauce Choose quality sauce for better flavor.
  • 2 cups cooked rice
  • 1 cup mixed vegetables (broccoli, bell peppers, carrots) Frozen vegetables can be used if thawed.
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • to taste Green onions for garnish

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Pour in the sweet chili sauce and stir to coat the chicken.
  4. Add the mixed vegetables and cook for an additional 3-4 minutes until they are tender.
  5. Serve the sweet chili chicken over the cooked rice and garnish with green onions. Enjoy!

Notes

If things go wrong, add more sauce. For a gourmet touch, a splash of lime or sesame seeds makes a great upgrade.
