Ingredients
  

Main Ingredients
  • 1 cup white rice
  • 2 cups vegetable broth or water
  • 1 cup sweet corn (fresh, frozen, or canned) Fresh corn in summer is recommended.
  • 2 tablespoons butter European butter for a bougie touch, optional.
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Method
 

Cooking Rice
  1. In a medium saucepan, combine the white rice and vegetable broth (or water). Bring to a boil.
  2. Reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
Sautéing Garlic and Corn
  1. In a large skillet, melt the butter over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Stir in the sweet corn and cook for an additional 3-5 minutes until heated through.
Combining Ingredients
  1. Once the rice is done, fluff it with a fork and add it to the skillet with the corn and garlic.
  2. Mix well and season with salt and pepper to taste.
  3. Serve warm, garnished with chopped parsley if desired.

Notes

A splash of reserved cooking liquid can loosen up the rice for a silkier texture. Great alongside a saucy main dish like chicken and gravy.
