  • ½ cup roasted peanuts, roughly chopped For crunch and flavor.
Dressing
  • 3 tablespoons lime juice Fresh lime juice is preferred.
  • 2 tablespoons sesame oil Adds a rich flavor.
  • 1 tablespoon Sambal Can substitute with sriracha if necessary.
  • to taste pinch salt Essential for enhancing flavors.
Garnish
  • to taste fresh cilantro Optional, based on preference.

Method
 

Preparation
  1. Slice the cucumbers and red onions thinly.
  2. In a large bowl, combine the sliced cucumbers, onions, and chopped peanuts.
Dressing
  1. In a separate bowl, whisk together lime juice, sesame oil, Sambal, and salt.
  2. Pour the dressing over the salad and toss gently to combine.
Serving
  1. Garnish with fresh cilantro if desired and serve immediately.

Notes

Best enjoyed fresh, but can be stored for a short time. Avoid letting the salad wilt. Consider adding shrimp or chicken for added protein.
