  • 1 pound chicken breast, diced Use fresh chicken for best results.
  • 2 cups cooked rice or quinoa Extra protein choice.
  • 2 cups mixed vegetables Use bell peppers, carrots, broccoli, or your favorites.
Peanut Sauce Ingredients
  • 1/2 cup peanut butter Creamy or crunchy as per preference.
  • 1/4 cup soy sauce Low sodium recommended.
  • 2 tablespoons honey For sweetness.
  • 1 tablespoon lime juice Freshly squeezed for best flavor.
  • 1 tablespoon olive oil Extra virgin is preferred.
  • to taste salt and pepper
  • Chopped peanuts and cilantro for garnish Adds a nice touch.

Method
 

Cooking Chicken
  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced chicken, seasoning with salt and pepper.
  3. Cook until golden-brown, about 5-7 minutes.
Prepare Peanut Sauce
  1. In a separate bowl, mix peanut butter, soy sauce, honey, lime juice, and a splash of water to reach desired thickness.
Assembly
  1. Layer the cooked rice or quinoa in bowls.
  2. Top with cooked chicken and mixed vegetables.
  3. Drizzle peanut sauce over the top.
  4. Garnish with chopped peanuts and cilantro before serving.

Notes

Feel free to customize the veggies based on preference. This recipe can also be made vegetarian by replacing chicken with tofu or chickpeas.
