- Prepare the garlic: Roast whole cloves in foil with oil at 375°F until soft, or finely mince for quicker flavor.
- In a saucepan over medium-low heat, melt butter or warm olive oil.
- Stir in the garlic and cook for 1-2 minutes until fragrant, ensuring it doesn't brown.
- Whisk in the cream or milk gradually until smooth and slightly steamy.
- Lower the heat and sprinkle in Parmesan cheese gradually, whisking to prevent clumps.
- Add salt, pepper, and nutmeg, and herbs if desired. Taste and adjust seasoning.
- Simmer for a thicker consistency if using for pizza.
- Use immediately on pizza dough, or refrigerate for up to 4 days. Reheat gently with a splash of milk.
