Ingredients
  

Main Ingredients
  • 2 cups grated zucchini
  • 2 large eggs Preferably at room temperature
  • 1 cup vegetable oil Use quality oil
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour Sifted if possible
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts or pecans Optional for added texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, vegetable oil, sugar, and vanilla extract.
  3. Add the grated zucchini to the mixture and stir well.
Mixing Dry Ingredients
  1. In another bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  2. Gradually add the dry mixture to the wet ingredients until just combined.
  3. Fold in the chopped nuts if using.
Baking
  1. Grease and flour two 9x5 inch loaf pans.
  2. Divide the batter equally between the pans.
  3. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  4. Let the bread cool in the pans for a few minutes before transferring to a wire rack.

Notes

For best results, use quality ingredients. You can freeze leftovers for future cravings. This bread also tastes great with chocolate chips added.
