Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the eggs, vegetable oil, sugar, and vanilla extract.
- Add the grated zucchini to the mixture and stir well.
Mixing Dry Ingredients
- In another bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry mixture to the wet ingredients until just combined.
- Fold in the chopped nuts if using.
Baking
- Grease and flour two 9x5 inch loaf pans.
- Divide the batter equally between the pans.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pans for a few minutes before transferring to a wire rack.

For best results, use quality ingredients. You can freeze leftovers for future cravings. This bread also tastes great with chocolate chips added.
