  • 1 cup salsa verde Jarred is fine; homemade if you prefer.
  • 1 cup pepper jack cheese, shredded Good quality is recommended.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • Fresh cilantro for garnish (optional)

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix the olive oil, garlic powder, cumin, salt, and pepper.
  3. Rub this mixture over the chicken breasts.
Grilling
  1. Place the chicken on the grill and cook for 6-7 minutes per side, or until fully cooked and juices run clear.
  2. During the last few minutes of cooking, spoon salsa verde over the top of each chicken breast and sprinkle shredded pepper jack cheese on top.
  3. Close the grill lid to allow the cheese to melt.
Serving
  1. Remove from the grill and garnish with fresh cilantro if desired. Serve hot.
