Method
 

Cooking the Beef
  1. Heat olive oil in a large skillet or griddle over high heat.
  2. Add ground beef and smash it flat into the pan. Let it sear undisturbed until deeply browned with crispy, craggy edges.
  3. Break it up slightly, then add onion and garlic. Cook until fragrant and juicy.
  4. Season with salt, pepper, garlic powder, onion powder, smoked paprika, and Worcestershire sauce.
  5. Remove from heat and immediately stir in the melted cowboy butter until the beef is glossy, buttery, and dripping with bold garlic flavor.
Making the Garlic Drizzle
  1. Whisk together mayonnaise, grated garlic, lemon juice, olive oil, and salt until smooth, creamy, and punchy.
  2. Chill briefly to let the garlic mellow and bloom.
Assembling the Tortilla Melts
  1. Heat a clean skillet over medium heat.
  2. Lay tortillas flat and sprinkle shredded cheese evenly over one side of each tortilla.
  3. Add a generous scoop of cowboy butter smashburger beef on top of the cheese. Fold tortillas in half and gently press.
  4. Cook tortilla melts until the bottom is deeply golden and crispy and the cheese melts into the beef.
  5. Flip and crisp the other side until locked together and shatteringly crunchy.
  6. Drizzle generously with creamy garlic sauce and finish with pickles, lettuce, or tomatoes if desired.

Notes

If you want a breakfast twist, fold in a fried egg before serving. This pairs well with a Korean-style morning spread. Don’t skimp on heat when searing; that first crust adds amazing flavor.
