Ingredients
  

Fish and Seasonings
  • 4 fillets White Fish (Cod, Halibut, or Sea Bass)
  • 3 tablespoons Olive Oil Fancy olive oil is lovely but any good quality works.
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Paprika Keep it sweet-smoky unless you want it spicy
  • 1 Salt and Black Pepper (to taste) Table salt works perfectly.
Vegetables
  • 1 piece Bell Pepper, thinly sliced Use any color you prefer.
  • 1 piece Zucchini, thinly sliced
  • 1 cup Cherry Tomatoes, halved Trader Joe’s cherry tomatoes are recommended.
Garnishing
  • 1 lemon sliced thinly This helps keep the fish moist.
  • 0.25 cup Fresh Parsley, chopped

Method
 

Preparation
  1. Preheat oven to 400°F.
  2. Place the fish fillets in a baking dish and drizzle with olive oil.
  3. Rub the garlic, oregano, paprika, salt, and pepper onto the fish.
  4. Scatter cherry tomatoes, bell pepper, and zucchini around the fish.
  5. Lay the lemon slices over each fillet.
Cooking
  1. Bake for 12–18 minutes until the fish flakes easily.
  2. Sprinkle chopped parsley over the top and serve immediately.

Notes

For best results, do not crowd the pan to avoid steaming instead of roasting. This dish is simple yet elegant and perfect for entertaining.
