  • 1 cup creamy or chunky peanut butter Chunky peanut butter is recommended for extra texture.
  • 4 tablespoons unsalted butter Use unsalted to control the saltiness.
  • ½ cup brown sugar Pack it well for best results.
  • ¼ cup whole milk Do not skimp on the milk.
  • 1 teaspoon vanilla extract Vanilla enhances the overall flavor.
Toppings
  • 1 cup caramel sauce Store-bought or homemade works.
  • 1 cup chocolate chips Melt for drizzling over the cookies.
  • to taste sea salt Optional, for garnish.

Method
 

Create the Cookie Base
  1. In a medium saucepan over medium heat, combine butter, brown sugar, and milk. Stir gently until the butter melts and the mixture starts to bubble slightly.
  2. Once the sugar dissolves, remove from heat and mix in peanut butter and vanilla extract until smooth.
  3. Gradually add oats, stirring until they are evenly coated. The mixture should be sticky and hold together when pressed.
Shape the Cookies
  1. Using a tablespoon or small cookie scoop, portion the oat mixture onto a parchment-lined tray.
  2. Flatten each portion slightly into a circular shape with the back of a spoon and create a small indentation in the center of each cookie to hold the caramel.
Add the Caramel Layer
  1. Spoon about a teaspoon of caramel sauce into the indentation of each cookie.
  2. Ensure the caramel is generously applied, as it will firm up slightly when cooled.
Drizzle the Chocolate
  1. Melt chocolate chips in the microwave in 20-second bursts, stirring after each interval until smooth.
  2. Transfer the melted chocolate to a piping bag or use a spoon to drizzle over the cookies in sweeping lines.
Let Them Set
  1. Refrigerate the cookies for at least 30 minutes to allow them to firm up.
  2. This chilling time helps the caramel set and enhances the overall texture.

Notes

For a more intense flavor, consider adding more sea salt on top just before serving. These cookies can be made ahead of time and stored in the refrigerator.
