  • 1 pound ground beef Can be swapped for ground turkey.
  • 1 small onion, chopped
  • 2 cups mixed vegetables (frozen or fresh) Trader Joe’s frozen mixed veggies are recommended.
  • 2 cups cooked pasta (macaroni or egg noodles)
  • 1 can cream of mushroom soup A key ingredient for nostalgia.
  • 1 cup shredded cheese (cheddar or mozzarella) Use a blend for best results.
  • to taste salt and pepper Add pepper and avoid salting beef early to retain juices.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is tender.
  3. Stir in the mixed vegetables and cook until heated through.
  4. In a large bowl, combine the cooked pasta, cream of mushroom soup, and the meat and vegetable mixture.
  5. Season with salt and pepper to taste.
  6. Pour the mixture into a greased baking dish and sprinkle with shredded cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Let cool slightly before serving.

Notes

This casserole can be made ahead of time by assembling, covering, and refrigerating for up to 24 hours. Add 10-15 minutes to bake time if baking from cold. It reheats very well.
