Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is tender.
- Stir in the mixed vegetables and cook until heated through.
- In a large bowl, combine the cooked pasta, cream of mushroom soup, and the meat and vegetable mixture.
- Season with salt and pepper to taste.
- Pour the mixture into a greased baking dish and sprinkle with shredded cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let cool slightly before serving.
Notes
This casserole can be made ahead of time by assembling, covering, and refrigerating for up to 24 hours. Add 10-15 minutes to bake time if baking from cold. It reheats very well.
