  • 1 can coconut milk Trader Joe's or Aldi brands are good choices.
  • 2 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup spinach Fresh spinach pockets great color.
  • Salt and pepper to taste
  • Dumplings (store-bought or homemade) Can be used based on convenience.

Method
 

Preparation
  1. In a pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the carrots and cook for a few minutes.
  3. Stir in curry powder and cook for another minute.
  4. Pour in the coconut milk and vegetable broth. Bring to a simmer.
  5. Add the spinach and dumplings, cooking until the dumplings are done and the soup is heated through.
  6. Season with salt and pepper to taste. Serve warm.
