Preparation
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- In a mixing bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing until fully incorporated. Then add the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Add the dry ingredients to the wet mixture in two changes, mixing on low or folding gently until just combined.
- Scrape the batter into your prepared pan and smooth the top with a spatula.
- Bake for 25–30 minutes, or until the top is golden and a toothpick inserted in the center comes out mostly clean.
- Let the bars cool in the pan on a wire rack. Once cooled, dust with powdered sugar and slice into squares.
Notes
These bars can be frozen for up to 2 months. Thaw at room temperature or microwave for 10-15 seconds before serving. Feel free to add chocolate chips, nuts, or sprinkles for variations.
